RECIPES: Dark Choc Pretzel & Puff Bars

Hello you lovely people! We’ve got something very nutty, sweet & savoury to offer you… These delicious and healthy dark chocolate-pretzel & puff bars! It is safe to say that these guys are a lot lot lot more healthy than their store bought peers… These are one of our favourite bars to make, as it’s packed full of yumminess, keeps you full of energy and it’s a perfect and a healthier carb load option pre-post workout or just a nice little snack to give you that proper good mood boost. You can freeze these bars for up to 3 months (although we’re pretty sure it’ll last max a week…if that!)

This is a recipe for 10 bars.

Ingredients

1 1/2 cups rolled oats

1/4 cup roughly chopped pecans

1/4 cup any butter (we used Flora Vegan)

1/5 cup coconut sugar

1/4 cup maple syrup

1/3 cup smooth peanut butter (we used Meridian)

1 teaspoon vanilla extract

1/2 teaspoon sea salt

3/4 cups puffed rice cereal (we used BIONA organics)

P1/2 cup roughly chopped pretzels

1/4 cup dark chocolate, roughly chopped

Instructions

Preheat oven to 175c

On a baking tray, spread pecans and oats and roast for 10 minutes, mixing up half way through

In a saucepan over medium heat, whisk butter, peanut butter, sugar and maple syrup. Once all is incorporated, remove from heat and add your salt and vanilla extract.

Take out your oats/pecans from oven. In a separate bowl stir together oats/pecans mixture, puffed rice cereal, pretzels and chocolate. Mix well. Add the peanut butter mixture and again mix well to coat everything.

Transfer the mixture into a lined baking pan. (Brownie sized tins would be perfect for this) 9 x 9

Place a piece of parchment to pat down firmly on the bars, creating a compressed even smooth layer.

Refrigerate the bars for 2 hours. Cut into bars and…. enjoy!!!!

You can store these bars in the freezer either individually wrapped or stored in plastic containers*
