Recipes: Chocolate Peanut Butter Protein Bars

Need a protein kick? These Chocolate Peanut Butter Protein bars will do the trick. This is a simple recipe that does not require any baking* The base is a combination of puffed rice cereal, peanut butter, maple syrup and protein powder - these real wholesome ingredients provide you with healthy fats, fiber and a good ratio of carbs - leading to a great boost in energy, keeping you full and very satisfied. Great as a pre-post workout snack, or those afternoon slump times… We decided to give these a little ‘oomph’ factor and cover the top with a rich dark chocolate and a generous sprinkling of roughly chopped mixed nuts (for that extra crunch). We promise this will be your go-to bar to keep in your fridge & snack/enjoy throughout the week.

Ingredients:

3/4 cup peanut butter (we used Meridian smooth)

1 1/2 tbsp maple syrup

1/2 tsp caramel extract (you can use vanilla)

2/3 cup vanilla protein powder

1 cup puffed rice cereal (we used KALLO wholegrain organic)

optional*

2 tablespoons chocolate chips + 1 teaspoon rapeseed oil

1/2 cup roughly chopped mixed nuts

Instructions:

Line a medium loaf tin with baking paper. Set aside.

In a saucepan, heat peanut butter, maple syrup and caramel extract over low heat. Mix together until well combined and smooth, then remove from heat and transfer to a large bowl.

Stir in protein powder until smooth, then fold in puffed rice cereal. Scoop the batter into the loaf tin and spread evenly. Use spatula to press down lightly.

Add chocolate chips and rapeseed oil in a small saucepan and place over low heat until melted. Pour over the tops of the bars. Sprinkle with the chopped nuts covering the surface fully.

Place in fridge for at least 2 hours before removing from pan prior to cutting.

Store bars in an air tight container in the fridge for up to 2 weeks.
